In August 2022, just a month after Bianca's passing, her stepfather Joel and I embarked on a trip to Hawaii, a journey filled with bittersweet memories and heartfelt tributes to our beloved Bianca.
Hawaii held a special place in Bianca's heart. She thrived in its vibrant atmosphere, reveling in the delicious cuisine, the warm sun, and the gentle weather. To honor her spirit, our first stop upon landing in Oahu was at Foodland, where Bianca had eagerly anticipated indulging in her favorite California Roll poke once she was cleared by her medical team.
During our time in Hawaii, Joel and I were determined to plant a lasting tribute to Bianca's passion for environmental conservation. Bianca had always been a staunch advocate for the planet, urging us to stop purchasing single-use plastic and conserve precious resources like water and paper (even setting up our at-home printer to make sure it prints double-sided!). Our search led us to Gunstock Ranch in the North Shore, where we were met with kindness and understanding. Together, we planted a Milo tree, its leaves resembling the shape of a heart—a fitting symbol, as Bianca had a unique way of expressing her love by forming a heart with her hands.
Throughout our stay, we made it a point to savor all of Bianca's favorite treats: Matsumoto shaved ice with its unconventional flavors like bubblegum and cotton candy, Boots & Kimo's macadamia nut pancakes, Bubbie's mochi ice cream (pistachio flavor only), and Roselani Mac Nut ice cream. And, of course, we indulged in all the Foodland poke we could devour, in loving memory of Bianca.
My sister Elena and her husband Lenny joined us for a portion of our journey. We gathered at Pai Honolulu to indulge in the cuisines Bianca would have loved. United in celebration, we honored Bianca's fleeting life, finding comfort and happiness amidst Hawaii's breathtaking landscapes.
Though our hearts ache with the absence of our dear Bianca, we are grateful for the opportunity to celebrate her life in her cherished paradise, where she felt most alive. We carry her love with us always, cherishing the memories and the moments we shared.
